Paleo Squash Pizza with Pesto + Mushrooms

Dinner Gluten-free Grain-free Paleo Pizza

Our newest obsession is squash on pizza: it's the perfect hearty winter vegetable to include in this healthy meal, and it pairs so perfectly with fresh pesto, shiitake mushrooms and of course, cheese! This cozy winter dinner is officially on repeat.

Ingredients

  • 1 package Stellar Eats Pizza Dough mix + add-ins
  • 3/4 cup pesto (homemade or store-bought)
  • 2 tbsp olive oil
  • 1 small delicata or butternut squash, seeded and chopped into small pieces
  • 200g shiitake mushrooms, torn
  • 1/2 tsp garlic powder
  • Sea salt and pepper
  • Mozzarella or vegan cheese

Method

Preheat your oven to 400 degrees and prepare the Pizza Dough according to the package directions. Shape into a large round on a lined baking sheet and bake for 12 minutes.

Meanwhile, heat 1 tbsp olive oil in a large skillet. Add your squash pieces and a big pinch of salt then cook, covered, over medium heat for 10 minutes, flipping the pieces halfway through. Add garlic powder and continue to cook for a few minutes until the squash pieces are tender and browned on the outside, then remove them from the skillet.

Heat your remaining 1 tbsp of olive oil and add your shiitake mushrooms. Cook them undisturbed for 4-5 minutes over medium heat, then flip the pieces and cook for an additional few minutes. Add salt and pepper and remove.

Spread the pesto over your pre-baked crust and add your squash and mushrooms. Top with desired amount of cheese and bake pizza for 14-16 minutes or until the cheese is melty and the crust is slightly browned.

Remove from the oven, let cool for 5-10 minutes, slice and enjoy!
