Paleo Chocolate Chip Cookie Cake

This cake is worthy of a celebration: two layers of fluffy Stellar Eats Chocolate Cake, creamy Stellar Eats Chocolate Chip Cookie-infused buttercream frosting and crumbles of cookie to finish it off. Sweet, easy to prepare and absolutely delicious.



Prepare your two Cake + Cupcake mixes (or just use one for a single layer cake) according to the package directions. Pour batter into two greased and lined 8-inch round cake pans and bake for 25-30 minutes or until the centre is set and a toothpick inserted comes out clean. Let the cakes cool completely on a wire rack.

Prepare your Chocolate Chip Cookie mix according to the package directions. Let cookies cool completely.

Make your buttercream by whipping your softened butter with an electric mixer until light and fluffy. Add in your powdered sugar, 1/2 cup at a time, and continue to beat. Add your vanilla and 1 tbsp milk to thin. Once a thick frosting starts to come together, add 1 tbsp more milk and/or some more powdered sugar to achieve your desired consistency. It should be thick but spreadable. Crush up 3 of your cooled cookies into fine crumbs, then gently fold them into your frosting.

When the cakes have completely cooled, place one on a plate and spread the top with a thick layer of frosting. Place the other cake overtop and then frost the sides and top of the entire cake evenly with remaining frosting.

Crush up 3 more cookies into large chunks and sprinkle them onto the centre of your frosted cake. Save remaining cookies for a snack later! Slice cake and enjoy.
